The Beauty of Vanilla

Let’s face it. All of us grew up flavouring our cakes, cookies and desserts with artificial vanilla essence. So what a revelation it is to finally use “the real thing” – vanilla seeds carefully scraped straight from the pod or vanilla bean paste made from the seed pods of the vanilla orchid. Yes, vanilla is an orchid!

Because growing, harvesting and curing vanilla beans is a highly specialized and labour-intensive process, true, natural vanilla it not one of the cheapest ingredients in the world. But the flavour, aroma and beauty of a product made with real vanilla is simply beyond compare.

So join us as we discover the beauty of vanilla. We have chosen to use top quality, organically-grown vanilla pods and natural vanilla paste from Heilala Vanilla, a company based in New Zealand and with plantations on one of the exotic tropical islands of Tonga. This family company is owned and managed by passionate vanilla growers Garth and Jennifer Boggiss who I met during one of their visits to Kuala Lumpur. Do check them out on www.heilalavanilla.co.nz.

Our featured recipes are:

  • Old fashioned vanilla butter cake

  • Quick vanilla kaya (coconut jam)

  • Vanilla bean biscuits

  • Super light vanilla cheesecake

  • Chilled honeydew melon sago infused with vanilla beans

  • Crepes with fresh mango and vanilla whipped cream

  • Caramelized pineapple and vanilla soufflé

Students working in pairs will make 3 recipes. Kindly indicate your choice at time of bookings. A light lunch will be served.
